When you’re battling a cold or flu, the last thing you usually crave is a gourmet meal. Cravings often turn to comforting, easy-to-eat foods that soothe the soul and provide much-needed nourishment. A classic example is grilled cheese, a simple yet satisfying dish that’s easy on the stomach and packed with comforting warmth.

Another quintessential comfort food is chicken soup. This classic remedy has long been touted for its ability to soothe sore throats and ease congestion. Here’s a simple recipe:

Ingredients:

  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 1/2 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions:

  1. In a large pot, sauté onion, carrots, and celery in olive oil until softened.
  2. Add chicken broth and chicken breasts to the pot. Bring to a simmer and cook until chicken is cooked through, about 15-20 minutes.
  3. Remove chicken from the pot and shred.
  4. Return shredded chicken to the pot with parsley, salt, and pepper.
  5. Simmer for an additional 5 minutes to allow flavors to meld.

Enjoy this comforting and nourishing soup while you recover.
