Another quintessential comfort food is chicken soup. This classic remedy has long been touted for its ability to soothe sore throats and ease congestion. Here’s a simple recipe:

Ingredients:

1 onion, chopped
2 carrots, chopped
2 celery stalks, chopped
4 cups chicken broth
1 pound boneless, skinless chicken breasts
1/2 cup chopped fresh parsley
Salt and pepper to taste

Instructions:

In a large pot, sauté onion, carrots, and celery in olive oil until softened.
Add chicken broth and chicken breasts to the pot. Bring to a simmer and cook until chicken is cooked through, about 15-20 minutes.
Remove chicken from the pot and shred.
Return shredded chicken to the pot with parsley, salt, and pepper.
